Out of Melfor? Substitute Melfor for Honey Vinegar

Instructions: 

Blend onion, mustard and vinegar in blender until smooth. Slowly add oils and seasonings. Finish by adding ice wine jelly.

Ingredients: 
One (1) white onion
125ml Dijon mustard
500ml Melfor
30ml Kosher salt
400ml olive oil
400ml canola oil
5ml siracha
One (1) jar ice wine jelly

Chef Ron Serves up another Peach season recipe. This simple grilled peach Melba recipe delivers maximum flavour with minimal effort. Start growing your peaches today.

Instructions: 

Split and grill peach skin side up. Turn peach and top with brown sugar butter and spices that have been pre-mixed. Close lid of barbecue and allow to cook three to five minutes.

In a martini glass scoop 1 (or 2 or 3) balls of ice cream, drizzle with raspberry coulis, fresh raspberries and toasted almonds. Carefully place peach on top to the side without losing all the juices and sugars

Ingredients: 
One (1) Freestone peach
5ml butter
15ml brown sugar
Pinch of cinnamon
Pinch of ginger
Pinch of nutmeg
Vanilla ice cream
Raspberry coulis
Fresh raspberries
Toasted sliced almonds

Instructions: 

In a Champagne Flute, add all ingredients and top with chilled Jackson-Triggs Cuvee Clos

Ingredients: 
One (1) oz Peach Schnapps
Quarter (¼) oz Chambord
Three (3) Raspberries
Two (2) slices of fresh peach
Five (5) oz Jackson-Triggs Cuvee Clos

Niagara Peach and Feta Salad

Niagara Peach and Feta Salad

Chef Ron serves up another toasty summer favourite featuring the Niagara Peaches.

Instructions: 

Half and grill peaches. Pre bake feta in a hot oven for 5 minutes and allow to cool.

Arrange lettuce leafs on plate or bowl and top with crumbled feta, sliced peaches and herbs. Drizzle with vinaigrette and garnish with ice wine jelly.

Ingredients: 
One (1) Freestone peach
Two (2) oz feta
One (1) head bibb lettuce
Two (2) oz ice wine vinaigrette
Half (½) ts ice wine jelly
Chive sticks
Flat leaf parsley

Grilled Peach and Corn Salsa

Instructions: 

Half peaches and remove stones. Grill until nicely marked on both sides and let rest 15 minutes. Husk corn and grilled until charred an all sides, cut kernels from cob.

Finely (or not so finely) dice peaches and all vegetables. Mix together and season with remaining ingredients.

Let stand at least 30 minutes to infuse the flavors and serve with grilled fish, chicken or pork.

Ingredients: 
Two (2) freestone Peaches
One (1) cob of peaches and cream
One (1) yellow pepper
One (1) red pepper
One (1) cucumber
One (1) red onion
30ml cilantro
30ml Flat leaf parsley
30ml Chives
125ml rice wine vinegar
125ml extra virgin olive oil
5ml ts siracha
10ml kosher salt

Instructions: 

Dice peach finely. Place peach, onion, celery and olive oil in a frying pan and cook on low heat until very soft. Remove from heat and add spices and jelly.

Place brie into an earthen wear dish and cover with peach mix. Bake in a hot oven (or closed barbecue) for 15 minutes.

Serve with crackers or sliced baguette.

One (1) Freestone peach
30ml diced white onion
30ml diced celery
5ml olive oil
Salt
Pinch Cinnamon
Pinch ginger
15ml Ice Wine Jelly
One (1) small Brie
